Some days nothing seems to go the way it should. Some days are just not right. Sometimes the only answer is chocolate. Sometimes the more chocolate a girl can eat, the better things go; the more things become right. So here's my favorite recipe for a Chocolate Marshmallow Cookie with Ganache and I hope it makes you feel better... Oh yes, and be sure and eat them, I mean "it" off one of your most decadent plates. They taste better that way.
Start from the end, and mix your glaze first. To do that, lightly melt (just soften really) 1/2 c. butter or margarine, and then add 1/2 c. cocoa powder, 1 1/2 c. confectioner's sugar and 3 Tbsp. water in a mixing bowl. I use a wire wisk and whip the mixture thoroughly by hand. It should be very smooth and dark and wonderful... set it aside (don't eat it).
Next, pre-heat oven to 350* and in one bowl, mix all of the dry ingredients. Sift together 1 3/4 c. flour, 1/2 tsp. baking soda, 1/2 tsp. salt. Add 1/2 c. cocoa powder. Set aside.
Now in a large mixing bowl, cream together 1/2 c. shortening, 1 c. granulated sugar, 1 egg, and 1/2 c. milk. Add 1/2 tsp. vanilla. Slowly add the dry mixture to the creamed and stir together until the dough begins to form. This dough is very soft and smooth when ready. Don't over beat it (do this only by hand) or it will become tough. If you want nuts in the batter, this would be the time to add them. 1/2 c. nuts of your choice, optional.
Drop the dough by scoops (I use a small ice cream scoop, but you could use really heaping tablespoons) onto a greased cookie sheet, and bake for 5 minutes. (I put approx. 9 cookies per sheet, as they don't spread much). When cookies have baked 5 minutes, pull them out of the oven and top each with 1/2 of a large marshmallow (either the traditional vanilla or any flavored marshmallow is good too) and return to oven for approx. 4 more minutes or until the marshmallows are just beginning to melt. Remove from oven and allow cookies to rest for approx. 5 mins. Remove from cookie sheet to cooling rack. Cover each marshmallow atop the cookie with a large tablespoon of ganache glaze. Allow to cool and set. If you don't, you'll burn your tongue really bad on the hot marshmallow, I hear... I personally have more self-control than to eat an entire batch of blazing hot cookies... so, if you can't keep it together, and you burn yourself don't call me.
This recipe makes 20 small ice cream scoop sized cookies (or, it takes about 7 1/2 minutes to eat them all after they've cooled just slightly...) On the thirteenth day there was chocolate... and it was good.
Omigoodness, am I first in line for a double batch? Please deliver promptly and I don't care if they burn my mouth!!!!

Oh you little piggy! You didn't share! They do look super yummy & I'm betting I could devour 20 of them in less than your 7 1/2 minutes. I challenge you to a race! Be warned, I'm a choc-champ! So get bakin' coz I'll be there on the weekend for the premininary choc-off. Oh & if you could ensure to have some good coffee on hand also that would be excellent. Yay!

Oh, I am happily a follower in the Church of Chocolate. But I'm not a baker so I'll need to pass this along to any bakers in my family.
As I was reading I heard Charlton Heston as the voice over..."It was good". But I know he wasn't the voice in the movie "The Bible". Thanks- are you trying to get me back for Caberet? It's going to bug me til I find out who it was.
